What is egusi?

Egusi are the seeds of a melon. They are dried and ground, then cooked into the soup, where they thicken it and give it a nutty, creamy texture. The soup is cooked with palm oil, peppers, onions and leafy greens, and with meat or fish.

What does it taste like?

Rich, nutty and savoury, with a gentle heat. It is hearty enough to be a full meal.

How do you eat Egusi Soup?

With fufu. Take a small piece of pounded yam, garri or semo with your fingers, press a little dent in it with your thumb, scoop up some soup and enjoy. You can also have it with white rice.
