Jollof Rice in Bali

Jollof Rice is rice cooked in one pot with a rich base of tomatoes, peppers, onions and spices until every grain turns deep orange and full of flavour. It is the dish served at almost every African party, and the best place to start if you are new to African food.

What does Jollof Rice taste like?

Savoury, smoky and gently spicy. The rice soaks up the tomato and pepper base as it cooks, so it tastes rich on its own. The best Jollof has a slightly smoky flavour from the bottom of the pot, which many people call “party Jollof”.

How we serve it

At Uncle Ray’s Buka, our Jollof Rice is made with basmati rice simmered in tomato and chili with African spices. It comes with fried plantains and coleslaw, and you choose your protein: beef, goat meat, chicken, cow leg, assorted, catfish or tuna fish.

What goes well with Jollof?

  • Chicken: the classic pairing.
  • Extra plantains: sweet and caramelised, perfect next to the savoury rice.
  • Suya or Spicy Meats on the side if you want more heat.
